January 2017: Spinach Sheet Pan Quiche

Happy New Year everyone!! We're starting the ABC year with a new recipe source. After a voting poll on Facebook, the Smitten Kitchen blog got an overwhelming response from our ABC bakers.

To change things up, our first recipe is a savory one: Spinach Sheet Pan Quiche. When I saw this recipe, it reminded me of a spinach quiche I enjoyed for lunch a couple months ago, at a French restaurant.

The recipe was cut in half and baked in a Pyrex 8" x 8" pan. As you may notice in the picture below, I made a crustless version. One of our ABC bakers on Facebook, Dian, baked a crustless version of the quiche earlier this week, and that's where I got the idea from :)

ABC - Perfect Christmas Stollen

This month's recipe concludes our ABC baking for 2016, and with that, baking from the Weekend Bakery blog. So we went out with a bang: Perfect Christmas Stollen. Soft citrus-y yeast bread, chock full of dried fruit, wrapped around a log of lemon flavored homemade almond paste. What's not to like?

ABC - Pumpkin Buns

The ABC challenge for the month of November wouldn't be complete without a pumpkin recipe. When I saw these cute Pumpkin Buns, shaped like little pumpkins, I couldn't resist adding them to the list.

Only made two pumpkin shaped buns with an almond for a stalk :)

So light and fluffy!!

ABC - Classic Dutch Apple Pie

I baked this October ABC recipe a couple months ago. The Classic Dutch Apple Pie recipe from the Weekend Bakery was amazing! Just the way I remember this childhood favorite dessert :)

There's a big difference between your traditional American apple pie and a Dutch one. Instead of a flaky crust, the crust is more like a sweet cookie crust. The filling has a minimal amount of sugar, allowing the apples to really shine.

ABC - Dutch speculaas gingerbread cake

This month's challenge, Dutch speculaas gingerbread cake, is one of my favorite things to eat when I was growing up. I had a lot of fun baking this recipe. The batter came together really quickly and only took about 25 min to bake. It smelled amazing. The flavor reminded me of that childhood snack :)
